Shochu can be made from rice (kome-jochu)
, although it is more commonly made from barley (mugi-jochu)
, sweet potato (imo-jochu) or sugar cane (kokutou-jochu). More
unusual base ingredients include buckwheat (soba-jochu), chestnut
(kuri-jochu), burdock (gobou-jochu), tea (cha-jochu) and milk.
In Japan, shochu is typically drunk mixed with ice ("shochu
rokku", as in "shochu on the rocks") or with hot
water ("oyu-wari") according to the season or personal
taste. A 60:40 ratio of water to shochu is typical.
Awamori is alcoholic beverage indigenous to and unique to Okinawa,
Japan. It is distilled rice liquor, differs from Shochu as it
is made from Thai-style. |
