Nihonshu, or Sake is Japanese alcoholic beverage,
brewed from rice. It is often referred to as rice wine. Sake is served
cold, warm or hot, depending on the preference of the drinker, the
quality of the sake and the season. Typically, hot sake is consumed
in winter and cold sake is consumed in summer. Honjozo-shu, at least 30% of the rice is polished away, with a slight
amount of distilled alcohol added. The distilled alcohol helps pull
some extra flavors out of the mash. Junmai-shu(literally "pure rice wine"),
made from rice only, and contains no additives or distilled alcohol. Ginjo-shu, made from rice polished 30-50%. Daiginjo-shu, made rice polished 50-70%. Koshu, aged sake Junmai ginjo, ginjo with no alcohol added Junmai daiginjo, daiginjo with no alcohol added |
